<p>Op zoek naar een verfijnd en feestelijk voorgerecht dat zowel heerlijk smaakt als een plaatje op je bord is? Deze bietentartaar met doperwtencrème, geitenkaascrème en gekarameliseerde pecannoten is de perfecte keuze! Ik maakte dit recept eerder voor mijn eetclubje en tijdens de kerst, en het viel zo goed in de smaak dat ik het graag met jullie wil delen.</p>



<p>De combinatie van frisse bietentartaar met de romige doperwtencrème en geitenkaascrème is niet alleen ontzettend lekker, maar ziet er ook prachtig uit. De gekarameliseerde pecannoten voegen een zoetige crunch toe die het gerecht helemaal afmaakt.</p>



<p>Of je het nu serveert bij een diner met vrienden of tijdens een feestelijke gelegenheid, deze bietentartaar zal zeker in de smaak vallen!</p>

Kook water in de waterkoker. Bak de knoflook een paar minuten in een steelpannetje in een klontje boter. Voeg de erwtjes toe en giet er kokend water op totdat de erwtjes net onder water staan. Verkruimel het halve bouillonblokje bij de erwtjes en kook ze in 5 minuten gaar. Giet af en laat de erwtjes helemaal afkoelen. Als de erwtjes helemaal afgekoeld zijn, pureer ze dan samen met de mascarpone fijn met een staafmixer. Pureer niet te lang zodat er een stevige, egale crème ontstaat. Voeg dan de gehakte munt toe. Breng de doperwtencrème verder op smaak met citroensap, peper en zout naar smaak. Bewaar de doperwtencrème in de koelkast tot gebruik. </span></div></li><li id="wprm-recipe-485-step-0-2" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Hak de pecannoten in stukjes en rooster ze in een droge koekenpan zonder olie totdat ze licht verkleuren. Voeg dan de honing toe en laat even kort bubbelen totdat alle noten bedekt zijn met een glanzend laagje. Voeg een beetje zout toe. Schep de noten daarna op een vel bakpapier en laat afkoelen en hard worden. Bewaar in een afgesloten bakje. </span></div></li><li id="wprm-recipe-485-step-0-3" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Doe de geitenkaas met de Griekse yoghurt en een scheutje melk in de keukenmachine. Mix totdat er een gladde, stevige crème ontstaat. Schep de geitenkaascrème in een spuitzak en bewaar in de koelkast tot gebruik.</span></div></li><li id="wprm-recipe-485-step-0-4" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Doe de uitgelekte bietjes in een kom. Houd vier mooie frambozen apart. Snijd de rest van de frambozen in kleine stukjes en voeg ze bij de bietjes. Voeg ook de balsamicoazijn, de balsamicocrème en de olijfolie toe. Schep alles goed door elkaar en bewaar in de koelkast.</span></div></li><li id="wprm-recipe-485-step-0-5" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Verdeel de rucola over de borden. Zet de kookring in het midden van een bord en schep deze halfvol met het bieten-framboosmengsel. Druk een beetje aan. Spuit er met een spuitzak geitenkaascrème overheen. Schep er vervolgens wat van de doperwtencrème overheen en strijk dit glad. Verdeel de pecannoten eroverheen. Herhaal dit voor alle borden. Garneer met een framboos per bord. </span></div></li></ul></div></div>

De sushi moet namelijk helemaal afkoelen voordat je ‘m kunt gebruiken en dat duurt wel 1,5 tot 2 uur. Nadat je de rijst hebt gekookt en afgegoten, doe je de rijst in een grote kom, voeg de rijstazijn toe en roer die door de rijst. Laat de rijst daarna helemaal afkoelen. Schep de rijst ondertussen af en toe om.</span></div></li><li id="wprm-recipe-347-step-0-1" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Snijd de wortel doormidden en snijd vervolgens net als de komkommer en avocado in lange, dunne repen. Bak de kipschnitzels en snijd die daarna ook in lange dunne repen.</span></div></li><li id="wprm-recipe-347-step-0-2" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Als de rijst helemaal is afgekoeld, kun je beginnen met het rollen van de sushi. Leg een norivel, met de gladde kant naar beneden op het bamboematje en verdeel ¼ van de rijst eroverheen. Laat zowel aan de onderkant als aan de bovenkant 1 cm vrij. Leg in het midden van de rijst de ingrediënten in een lange horizontale rij en verdeel met een mes een klein beetje mayonaise over de ingrediënten.</span></div></li><li id="wprm-recipe-347-step-0-3" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Daarna kun je beginnen met het rollen van de sushi met het bamboematje. Maak het bovenste stukje nori een beetje nat om de rol op het einde ‘dicht te plakken’. Herhaal dit met de rest van de norivellen. Snijd daarna met een scherp mes voorzichtig in stukjes. Tip<img src="https://s.w.org/images/core/emoji/16.0.1/72x72/1f4a1.png" alt="💡" class="wp-smiley" style="height: 1em; max-height: 1em;" />maak het mes eerst een beetje nat onder de kraan.</span></div></li></ul></div></div>

Zodra de rode biet klaar is, vouw je het aluminiumfolie open en laat je deze ook even afkoelen. Snijd in de breedte doormidden. Je gebruikt de helft van de rol. Verdeel de helft van de zoete aardappelpuree in de lengte over de onderste helft van het bladerdeeg. Zorg daarbij dat de randen vrij blijven. Verdeel daarover de helft van de stukjes zongedroogde tomaat en geitenkaas. Verdeel daarover de bietenpuree, de rest van de stukjes zongedroogde tomaat en geitenkaas en tot slot de rest van de zoete aardappelpuree.</span></div></li><li id="wprm-recipe-112-step-0-5" class="wprm-recipe-instruction" style="list-style-type: none;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 20px;"><span style="display: block;">Vouw het deeg over de vulling heen dicht en druk de randen dicht met een vork. Splits het ei in een kommetje, je hebt alleen het eigeel nodig. Klop dit los met een vork en bestrijk met een bakkwast de bovenkant en zijkanten van de wellington met het eigeel. Dit zorgt ervoor dat de wellington straks mooi goudbruin uit de oven komt. Bak de wellington 25 minuten in de oven. Garneer met de gehakte amandelen.</span></div></li></ul></div></div>
